Friday Favorites: Out of This World Crepes

I don’t want to brag or anything, but I’m pretty famous for my crepes. That and my chocolate chip cookies, but that’s another post. It’s one of those recipes that people call me for and ask me to make for them.

Crepes!

I don’t think I could even estimate how many I have made over the years. They are simple to make, I usually have all the ingredients, they’re perfect for entertaining. Add them to your repertoire — you won’t be sorry.

Ingredients:
6 eggs
2 cups flour
1/2 Tbsp. sugar
1/2 tsp. salt
1 tsp. vanilla
2-1/2 cups milk
1/4 cup butter, melted

Making crepes!

I blend the eggs and flour together first, and then add the sugar, salt and vanilla. Then slowly add the milk and butter (make sure the butter is cooled off — I usually add cold milk to the butter to speed it along). Done. Easy. To make the batter silky, strain it through a sieve. Let it sit in the refrigerator until you are ready to cook.

You don’t need a fancy pan to cook crepes in, but they do make you feel cooler! I usually give my pan a spray of Pam before I pour in the first dollop of batter and then leave the pan alone after that. Crepes are thin, so just add enough batter to the pan to coat.

And they cook really quickly…don’t walk away.

Turn the crepe over when bubbles form on one side. Finish cooking the second side and remove from the pan.

Now for the toppings. There are the traditional fillers like sugar, strawberries, raspberries, jam, whipped cream, etc. Those are all fine and good — but the two must-haves in my house (and I keep plenty in the pantry) are Nutella and Trader Joe’s Lemon Curd.

If you haven’t tried Nutella, you’re been missing out. Costco sells two giant jars of this hazelnut/chocolate concoction. Get them.

As for Lemon Curd…if you love the taste of lemon, you’ll love this. I’m a chocolate die-hard and I almost always choose a combo of lemon curd-and-whipped cream (and raspberries if I have them…heaven!)  filling to Nutella.

That’s saying A LOT about how good this is. I’ve tried all kinds of lemon curd and I know people who make their own…but Trader Joe’s is far and away my favorite brand.

Now, fill the crepe with whatever you want and fold into 1/4, if you want to be Frenchie about it. I may or may not (or probably will) call you out on rolling them if you eat crepes at my house!
